Taste of Africa, Wednesday 14th March – Angola Special
It may be asserted that every country features its own soul food. However “soul food” refers back to the blending and developing of a distinct type of culinary: it’s a mixture of West African cooking started in the southern part of United States and today significantly an integral part of the cultural traditions of African-Americans.
In the whole of sub Saharan Africa, from Dakar (Senegal) to Dar es Salam (Tanzania), southwards to Cape Town (South Africa), “Soul food” features an affordable and fulfilling cuisine based upon cereal products, veggies (greens and yams), pork and also chicken and a wide selection of tantalizing spices.
Out of these seemingly few list of items comes a literally unending array of various delicacies.
Mediterranean Feast, Friday 3rd March – Spanish Tapas
Mediterranean cooking attracts most of us as it has such a diverse range of flavours, ingredients and a cuisine that most of us can directly or indirectly relate to.
There is nothing quite like the aromas and spices of North Africa and the delicious fruits, ripe tomatoes and wonderfully diverse foods of the Mediterranean. The colours and flavours combine into rich Tagines, Kefta, delicious flatbreads with herbs – all part of the wonderful experience.
Our Mediterranean Feast Cookery Class brings you up close to this exciting cuisine and fuses flavours from Spanish, Greek and Turkish cookery, as well as dishes from Lebanon and the South of France.
