Derick Balansoy

My name is Roderick “Derick” Bolansoy. I have over 10 years of experience in the food management and restaurant industry. Originally from the Philippines, I started working for Burger King in my home country, and then internationally in Saudi Arabia and the UK. I was a manager in the fast food chain, and have also managed a number of pubs in West London.

Currently, I am based in London’s up-and-coming neighbourhood, Dalston, where I manage the Vortex Jazz Bar Club and run my family’s take-away stand, The Food Bar, in Gillette Square.

Food is a family affair, as my wife bakes cakes for the community and my three-year-old son is head-cake-taster. Since 2012, I have been sharing my knowledge and love for Asian-fusion foods as a teacher at London City Hospitality Centre in Hackney Community College in Hoxton / Shoreditch.
